Melt the butter (not heated), add the eggs and sugar, and mix together, adding the flour, vanilla, yeast and grated lemon zest. When the mixture is complete, knead in the lavender. Leave the dough to rest for half an hour in the refrigerator. Then roll out onto baking paper, to a thickness of about 1 cm, using rolling pin. Cut out the biscuits with a heart-shaped cutter.
Place the biscuits on a baking sheet lined with baking paper and bake in the oven at 180°C for 15 minutes. The lavender hearts are ready to be served.
