Ingredients

pig livers

pork

breadcrumbs

grated parmasan

juniper berries

burro e olio

Chop two hundred grams of pig's liver and two hundred grams of lean pork, add two tablespoons of breadcrumbs, two beaten eggs, salt, pepper, grated nutmeg, a generous handful of Parmesan cheese, and five crushed juniper berries.

Wrap each meatball in a piece of caul fat. Place them in a baking tin with oil and butter and leave to cook over low heat for about an hour.
