Ingredients

hop shoots
onion
white wine
eggs
tender leaves of nettle
aromatic herbs

Pick the tender parts of the hop shoots in spring. Gently fry the finely chopped onion. Add the chopped hop shoots and leave them to soften, splashing with white wine, and cook for a few minutes. Use to cook frittata as usual.

You can also cook tender nettle leaves and herbs with the hops, as preferred.
