Soma, (which resembles bruschetta) was, and still is in some areas, one of the traditional Piedmontese snacks, always accompanied by a glass of Barbera d'Asti.
Rub the slices of bread on both sides with the garlic, making sure that the strong taste of the garlic is absorbed well. Season with salt and pepper to taste and then pour over a drizzle of oil.
An interesting variation of this recipe (typical of the Monferrato, Biellese and Canevasano areas) is made by placing thin slices of lard between two slices of bread already rubbed with garlic, then putting them in the oven for a few minutes.
