anchovies in salt
to taste
white wine vinegar

"tricorno" hat shaped bag of pork rind

extra virgin olive oil
1 spoon
mustard
2 glasses
dry white wine
2 leaves
bay leaves
to taste
pepper
to taste
salt

Desalt and fillet the anchovies. Peel the onion. Place the meat, the anchovy fillets, quartered onion, garlic, bay leaf, mustard,  wine, four tablespoons of vinegar and four tablespoons of oil in a saucepan. Place over the heat and cook, covered, for about two and a half hours, adding hot water if necessary. When cooked, add salt and pepper to taste, blend the sauce and pour over the sliced meat.
