Place the stale bread in a large bowl and cover it with milk, adding sugar, raisins, broken walnuts and cocoa. Leave to soften for at least 12 hours. Crumble the bread and add the eggs and grappa to the mixture. Pour the mixture into a cake tin greased with butter and sprinkled with breadcrumbs. Bake at 180°C for about 45 minutes. Although plain and simple, this cake, created in the mountains of Ossola to use up leftover bread, was reserved for celebrations. If children were going to be eating it, grappa was replaced with a sweet liqueur.
