Wet both types of amaretto cookies, crumbled, in a bowl, with a little warm milk. After 20 minutes add the cocoa powder, stir and pass the mixture through a sieve. Incorporate the beaten eggs and egg yolks with 140 grams of sugar, flavored with a small glass of coffee. Heat the oven to 170° C. Caramelize the remaining sugar over a high flame in a saucepan with 2 tablespoons of water.
Then pour it into a loaf mold, rotating it so that it coats it uniformly. Transfer the mixture into the mold and cook the bônet in a bain-marie pan in the oven for 45 minutes. Let it cool at room temperature, remove it from the mold and serve it, decorating it as desired.
