Cook the chopped up pom matan, separately add a few pieces of butter, nutmeg, and the boiled sausage to the cooked apple purée and then mince and mix with a pinch of salt. A variation of the filling, suitable for vegetarians, is obtained by replacing the sausage stuffing with egg, cabbage and pesto bread. The apple agnolotti must be served with a good tomato sauce flavored with all the vegetable garden flavors.
