First boil the vinegar, until halving the volume. While still hot, pour it into a bowl where you have put the garlic and the shallots, finely chopped, and the herbs, well washed and dried.
Leave it to marinate for at least two hours, after which filter and place into small well-capped bottles to preserve the fragrance of the aromas.
Use this vinegar to season raw vegetables.
