Vigorously beat three eggs with three spoonfuls of flour in a large bowl. Once mixed, add 500 ml of milk and a pinch of salt and stir well until the mixture takes on a smooth, even consistency.
Pick eight acacia blossoms. After checking for insects, dip them in the batter and fry them in boiling seed oil until crisp and golden. Drain well on kitchen paper and serve piping hot.
